11.07.13 | PEACH SALSA


This is simply delicious. It's sweet, it's sour and it's fiery - it's everything you want from a salsa. Try it along some barbecued jerk chicken or put it in some sizzling chicken fajitas, either way it's a real treat and so summery. Peach Salsa couldn't be more perfect for this glorious weather if it tried!



You will need:

3 ripe peaches - stone removed, diced
1 green chilli - seeds & pith removed, diced
1 green bell pepper - seeds & pith removed, diced
1 medium white onion, finely chopped
1 large bunch coriander - roughly chopped
2 limes
sea salt

And you will need to do this:

1. Add all your ingredients except the limes and salt to a large bowl and mix well to combine.



2. Sprinkle with a good handful of sea salt and then dress with the juice of the 1 1/2 to 2 limes (to taste) then mix again.
3. Refrigerate for 30 minutes before serving :)

  1. Yum - I really feel like eating a peach now. I think the sun being out has suddenly made me crave all those classic summer flavours. Will be trying this...!
