1. I wished I had been a guest at this old hollywood back yard movie night party.
2. I got annoyed when i realised i've somehow managed to lose this.
3. I read about another beautiful wedding. It's the daughter of Pip Lincoln! Cool!
4. I wondered how this little lady eats so well, whilst all my own little miss will eat is yogurts & strawberries. Oh & goldfish crackers *le sigh* Maybe I should read this some more?
5. I got excited at the prospect of visiting here again this Easter break. Providing that is, we can still fill up our car with petrol. Grrrrr.
6. I smiled at this cheery blog post from fellow UK blogger Abigail, as the UK basked in beautiful sunny days. (I even got my blue legs out it was THAT warm)

1.  I fell in love with this beautiful idea
2. I made these amazing shrimp taco's. The home-made Pico de Gallo totally stole the show!
3. I read all about this gorgeous wedding part one and part two and then saw the video.
4. I promised myself I will make this salad as soon as possible.
5. I ordered these cute yellow Saltwaters for Flo. I may have ordered the tan colour too in mama size ;)
6. I caught up with my mate Bev's creative every day project which i've missed for a while
7. I gazed in awe all at this very cool lady

WHAT WE ARE EATING: Pico de Gallo

I made some Pico de Gallo last night to go with our taco's & it was flippin' gorge. Total nom worthy food that ticked all my boxes - healthy, fresh, spicy & most importantly, it included corriander, which is my favourite ingredient of all time! I am totally obsessed, and eat it EVERY. SINGLE. DAY.  I'm going to have a crack at growing it at home this summer, although i've read that coriander is a bit of an arse to grow and i'm crap at growing stuff in general, but i'm going to give it a go anyway! Any tips?

Here's the recipe (adapted from Goop)

12 cherry toms (various colours) - quartered
2 tablespoons of corriander leaves - chopped
3 tablespoons of really really finely diced onion
1 de-seeded & chopped fresh red chilli (more if you're hard)
Juice of half a lime (more if you're me)
A good pinch of coarse sea salt

Combine your tomatoes, corriander, onion & chilli. Sprinkle with the salt, then dress with the lime. Then... you're pretty much done! Enjoy x
